Hi. I just took this out of the oven… and I’m in heaven. Thank you 100x for giving me an option that actually has a bread like texture so good I don’t feel I’m missing out. Perfect way to begin a new year of gluten free living. I’m seriously excited. 🙂
I can’t be certain because I’ve never tried it without the xantham gum. It serves the purpose of gluten in this bread – it holds it together. So my guess is that without the xantham gum it would be quite crumbly. It would taste good, you probably wouldn’t be able to slice it very nicely. Good luck!
The beauty of having a daughter who does this stuff is that I (hopefully) get to taste it without having to do the work. Rich (Dad)
